Parmesan Tilapia.

Why hello there! 
I have been in such a pickle on what to blog about lately. I thought it would be easier to blog about what is on my mind, but I realized that sometimes I just don't want anyone else to know everything that goes on in my life all the time! I just kinda like having a private life of my own thoughts between me and God and I think that's ok. It's very hard for me to express true, blunt feelings and thoughts where others will read..so I decided that instead of getting frustrated at myself for not being able to do so, I will blog about what I like! So for now expect: DIY, Home Decor, Fitness, Travel, and Recipe posts...oh and of coarse the occasional rant.

Anyways here we go.... Parmesan Tilapia Recipe: 



Ingredients: 

2 Large Tilapia Fillets 
1/4 Cup Parmesan Cheese
1/8 Cup Butter
1 1/2 Tbs. Mayo
1 Tbs. Lemon Juice
1/2 Tsp. Garlic 
Pepper to taste. 



1. Turn your oven to broil on high and make sure the rack is on the top.
2. Mix together all the ingredients except pepper and Tilapia.



3. Place Tilapia on a foil lined baking sheet and broil for 3-4 mins. 





4. Take out and flip over.

5. Spread cheese mixture on and pepper to taste.


6. Return the fish to the oven and broil for another 3-4 mins. 

This is what you get! It may not look fantastic... I'm definitely not a pro at taking pictures of food but TRUST me it's so good. 





Seriously this recipe is so delicious and a nice change up from my normal recipe that I stick to. 
I would serve these fillets with some fresh green beans and call it good (especially because the Costco fillets are huge!)

Easy Chicken Pesto Panini

I don't know why I didn't share this super easy recipe sooner!
I think that I have been making this almost every day for lunch for the past month because it's so stinkin' good and I'm obsessed with pesto. 
It all started one day when I got off work and came home to make a panini. After I made it, I sat down to watch some Gossip Girl on Netflix.
Now it's a ritual that I have somewhat had to break because Kyle now eats them with me and doesn't exactly like Gossip Girl... but now whenever I eat a panini I just feel the need to watch some GG! 
That was the back story... ;)

Here's how you make it..
(seriously it's so simple I'm a little embarrassed to call it a recipe)


What you will need:
Pesto
Butter
Sourdough bread 
a couple slices of mozzarella cheese
some onion 
Not pictured is leftover chicken breast or you can use turkey lunchmeat which is what I use when we don't have leftovers

Start heating up your panini maker. Mine is from Macy's, it was on sale for 19.99!


Put some butter on your two slices of bread.


Flip over and spread some pesto on.


Seriously this stuff is amazing.. I use it to sauté chicken, shrimp, fish, in pasta, etc.


Add slices of cheese and onion.


Add your leftover chicken or lunch meat.
Ours is just plain and baked and it tastes just fine. 


Add the rest of your cheese and onion.


Put the slice of bread on top, butter side up.


Put it on your panini maker. No need for non stick spray. 


I cook mine on almost the highest setting


Push it down to flatten and melt the cheese.

A there you have it! It's so quick and easy to do, especially when your in a pickle as to what to make for dinner and you didn't thaw meat...I tend to do that ;)

Easy Crockpot Lasagna.

With a new semester starting, I am not going to have a lot of time to cook for Kyle and I when I get home from school so, I decided to finally start using my crockpot. I have been searching Pinterest for yummy crockpot dinners and I found this Lasagna one. I seemed easy enough so I thought I'd give it a try! 

Ingredients:

Ricotta cheese

Mozzarella cheese

Parmesan cheese

Turkey meat

Pasta sauce

Onion

Garlic

Uncooked lasagna noodles


First, I mixed together all my cheeses in a medium sized bowl. 
I did not use any measurements.. so i'm guessing I used about 1/4 C. Parm. 3/4 C. Ricotta and maybe 1/2 C. Mozzarella..
Sorry, I wasn't actually planning on making this a blog post until after I had made the meat and cheese mixtures. 


This is the consistency that I ended up with.  


Next, I browned some turkey meat with 1tb. of garlic and maybe 1/4 C. or less of red onion. Then I added my pasta sauce. 
Ratio of sauce to meat is up to your discretion.


I ended up adding a little more sauce to the mixture than shown in the picture. 


I decided to try these liners to make my life a little easier...



I started spooning some of my sauce and placed it in first. 


Now you just layer your ingredients..

You will have to break the noodles to fit the pot.

More cheese.


Add the rest of your sauce and put mozzarella cheese on top. 


Put on the lid and 3 and a half hours later, you get easy and super yummy lasagna!


It might not look pretty but it tasted delicious and it was hubby approved!

Chocolate Chip Pumpkin Bread


I've been searching Pinterest for pumpkin recipes and decided to try and make some pumpkin bread! This was my first time making it and I must say it's pretty delish and SUPER EASY!
Hope you enjoy it as much as we have! 

Yield: 2 loaves

Ingredients
- 3 C. all-purpose flour
- 1 1/2  tsp. baking soda
- 1 1/4 tsp. salt
- 2 tsp. pumpkin pie spice
- 1 tsp. cinnamon
- 3/4 C. room temp. butter
- 2 1/4 C. sugar
- 3 eggs
- 2 tsp. vanilla extract
- 1 C. buttermilk
- 1 3/4 C. pumpkin puree
- 2 handfulls semi-sweet chocolate chips



Instructions
1. Preheat oven to 275.

2. In a medium sized mixing bowl, combine flour, baking soda, salt, cinnamon & pumpkin pie spice.
Stir together with a fork to combine dry ingredients.


3. In mixer, cream together sugar, vanilla & butter. Add eggs one at a time.


4. Gradually add the dry ingredients into the bowl while it stirs on the first speed. Alternate with adding buttermilk.



5. Add in pumpkin puree until combined.


6. Add two handfuls of semi-sweet chocolate chips and stir.



7. Pour batter into 2 greased & floured loaf pans. (I only wanted to show my pretty pan ;) )


8. Bake for 1 hour 30 minutes.




9. When done, let the loaves cool for a couple minutes then cover with tin foil to keep the bread moist.



Remove from pan and enjoy!
